Both devices are equipped with secure chips. One chip called secure element chip that protects your private keys and another is added for multipoint control unit (MCU). Though both devices have chips to serve common purposes but Ledger Nano S Plus certification comparatively more advanced than model X. But that does not mean model X is less. It is just because S Plus model is a new product of the company which has latest certification.
Ledger Nano X and S Plus secure element chips are CC (Common Criteria for Information Technology Security Evaluation) certified for up to 5+ Evaluation Assurance Level (EAL5+) and 6+ Evaluation Assurance Level (EAL6+) respectively.
