How many cryptocurrencies can you store on Ledger Nano X, S and Nano S Plus simultaneously?
Though Ledger Nano X coin support list is very large but it doesn’t mean that you can store all listed coins at once, there are storage limitations. For instance model S lets you manage up to 6 apps simultaneously and latest model Nano S Plus supports up to 100 simultaneously installed apps. Astonishingly. Ledger Nano X has storage capacity for up to 100.

No, to access some coins and tokens you will need to use third party services for example to access ERC20 tokens you will need to use MyEtherWallet or MyCrypto.
